Coffee Oat Cookies Recipe From @balancednotclean

Super quick, gooey, chewy-but-soft energy boosting cookies? Yes please! 

With slow-digesting oats, honey for a sugar boost and caffeine for focus and energy, these cookies are the energy bar replacement you are looking for. The recipe I have provided creates 4 large, thick cookies with 54 grams of carbs (+3g fibre), 9 grams of protein and 7 grams of fat. At just over 300 calories per cookie, you could use these as a snack to take with you on the trail, or before a heavy weightlifting session. Unless you are ketogenic, carbohydrates are the preferred fuel source of the body and thus are essential for workout performance.

 

If you want a lower calorie cookie, you could halve their size – enjoying a carb boost without it being as high in calories.

 

Don’t like coffee or don’t want the caffeine? Substitute the coffee hazelnut breakfast bircher mix for another flavour of your choice. I recommend Super Berry.

 

Ingredients:

  • 160g The Protein Works coffee hazelnut breakfast bircher mix
  • 160g runny honey
  • 80g philadelphia light

 

Method:

1) Mix all of the ingredients together until evenly combined.

 

2) Fold a sheet of baking parchment so that it completely covers your microwave plate. Make sure the non-stick side is facing upwards.

 

3) Drop four, thick cookie shaped blobs onto the baking parchment.

 

4) Microwave the four cookies for 4 minutes (850W). If you are only making a single serving cookie (20g philadelphia light, 40g bircher mix and 40g honey), microwave for 3 minutes.

 

Microwaving for longer than these suggested times will make the cookies harder (as the honey gets hotter, it will react more). Remember that the cookies will firm up slightly as they cool, and that you can always microwave for longer if necessary (but you can’t un-microwave!).

 

5) Once you are happy with their done-ness, carefully separate your goodies from the baking parchment and enjoy!

 

The cool cookies should keep in the fridge for a couple of days or the freezer for about a month if well wrapped (but they’ve never lasted that long in my house 😉 ).

 

You could try a caffeine free version by using one of the other bircher flavours.
