White Chocolate Fudge & Peanut Butter Protein Truffles

These mouth-watering truffles are so indulgently moreish; you won’t believe they are healthy! Packed full of protein, these make the perfect after-dinner sweet treat or as a perfect pre or post gym protein snack. Once you try them, you’ll be coming back to make these time and time again. 

Makes 15 truffles

Step 1. Mix your pea protein 80, honey and loaded nuts in a large bowl until combined. If you find your mixture is too dry, add more peanut butter. Add more protein powder if the mixture is too wet

Step 2. Once your mixture is a consistency that you can handle, roll into equal sized balls (as big or small as you like) and place on a cling film or parchment lined baking tray. Refrigerate to chill for an hour. 

Step 3. While they’re chilling, melt your chocolate in a heatproof bowl, either in the microwave (stirring every 10 seconds) or in a glass/metal bowl over a pan of boiling water. 

Step 4. Once melted, allow to cool slightly and cover a baking tray in clingfilm or 

Step 5. Remove your balls from the fridge and using a skewer (or fork) coat in dark chocolate one-by-one until fully covered. 

Step 6. Place back onto a lined baking tray and sprinkle each truffle with the finely chopped salted peanuts until covered. 

Step 7. Return to the fridge for at least an hour to chill before eating. 

Step 8. Remove and let sit for a minute or two before eating – enjoy! 

Tip: you can also coat these truffles with cacao nibs, another chopped nut of your choice, finely chopped fudge, or drizzled with white chocolate.
